Hoover Dam Half Marathon: Race Recap
After Sunday night’s veggie prep, I got to thinking about making sure that I take more time to prepare meals weekly. I tend to have most of my time available Sunday nights, but during the week forget about it. Gar bear is lucky to get some pizza rolls and a sammich for dinner if I wait too long to think about it…
So, on to my mission!
New Meals to Prepare
*that hopefully will get me through to Wednesday
1) Black beans, corn, chicken & brown rice
2) beef curry & brown rice
3) breakfast – oatmeal parfait (inspired by an overnight oats idea from Beks)
Black beans, corn, chicken & brown rice in the crock pot – A.K.A.
Easy Beans & Chix
I bought dried black beans (on the cheap) with the intention of making something crock-pot-ish. After some internet Googlin’ I stumped upon this recipe and this site that walks through how to cook dried beans in the crock pot.
This made 2 servings, 2nds for Gar, and then lunch for us both!
1/2 packet of Original instant oatmeal (cooked per the box)
1 container greek yogurt (whatever flavor you want)
a few blueberries
honey, 1 tsp
splash of almond milk
It came out yummy! Plus I didn’t have to prepare it the night before (we all know the issue I have with planning meals) packed with protein and fiber and fruit!
