Makin’ meals like a good wifey

After Sunday night’s veggie prep, I got to thinking about making sure that I take more time to prepare meals weekly. I tend to have most of my time available Sunday nights, but during the week forget about it. Gar bear is lucky to get some pizza rolls and a sammich for dinner if I wait too long to think about it…
So, on to my mission!
New Meals to Prepare
*that hopefully will get me through to Wednesday
1) Black beans, corn, chicken & brown rice
2) beef curry & brown rice
3) breakfast – oatmeal parfait (inspired by an overnight oats idea from Beks)
Black beans, corn, chicken & brown rice in the crock pot – A.K.A.
Easy Beans & Chix
I bought dried black beans (on the cheap) with the intention of making something crock-pot-ish. After some internet Googlin’ I stumped upon this recipe and this site that walks through how to cook dried beans in the crock pot.

 Here’s my version of the recipe (tweaks with what I had at home)
    chicken breast, boneless, skinless, 8oz.
    1 bag dried black beans, cleaned & soaked 10-12 hours
    corn, no salt added, 15oz can
    brown rice, 1 3/4 cup, uncooked
    water, 1 cup
    low sodium chicken broth, 1 cup
    Adobo seasoning, 1 tbs
    Sea Salt, 1 tbs
    I marinated the chicken, too, overnight with some Adobo and broth while the beans were soaking. Then, this morning I threw everything together into the crockpot and put it on high. I figured I’d see how it did in 2 hours (before I left for work) and then cook it on low the rest of the day until I got home. (stay tuned for how it comes out 😉
    Thai Beef Curry (w/brown rice)
    If you refer back to this post you can see that I can tend to get a little curry crazy. But I did change things up a bit this time with beef (on sale from Publix – thin sliced steaks) and I used fresh string beans, mushrooms, and bok choy.
    Hubs kept saying “mmmm….” … in guy-speak that means “food taste yummies)
    This made 2 servings, 2nds for Gar, and then lunch for us both!
    Oatmeal parfait
    Beks and I were talking about a breakfast she posted this week called Overnight Oats. I had every intention of going to the grocery store to get un-instant oats, but didn’t. Therefore, I improvised with what I had at home 😉
    1/2 packet of Original instant oatmeal (cooked per the box)
    1 container greek yogurt (whatever flavor you want)
    1/3 banana
    a few blueberries
    honey, 1 tsp
    splash of almond milk
    It came out yummy! Plus I didn’t have to prepare it the night before (we all know the issue I have with planning meals) packed with protein and fiber and fruit!
    yep made it in the same bowl I cooked the oats in, less dishes = happy me

    You are good! So are you telling me that not only did you grocery shop yesterday, but you also prepped all the veggies not to go bad, and cooked food to last you through Wednesday? That’s pretty awesome.

    i love me some steel cut oats and if you cook them in the crock pot they are much easier in the am. true story.

    I got an apple + oats crock pot recipe off I’m definitely trying it this week.

      It’s the same as my chicken recipe but with beef. or you mean share the actual dish? lol. I have a tiny bit left 😉 let me know when you try the oats in the crockpot!
