Sometimes I wish I was the kind of person who was able to run miles and miles solo, no problem. I mean, when I’m in the gym, I do stay to myself but I’m only in there maybe 45-60 minutes at a time. On a 60+ minute run, I have major A.D.D. Squirrel! Thank goodness for company that keeps me amped! Tuesday morning I ‘slept in’ until 630a before running my usual 5 miler. I’d planned to do a variation of the Sunday route I ran with K, and hubby wanted to join me so I wasn’t alone. Yay company!
Tuesday’s workout: 6 mi run (3 mi at sub-9:00/mi pace!)
The w/u mile was pretty hard, but once I got going I felt great! It’s always nice to chit chat about life and things beside work when you’re hanging with your s.o. Two miles in we were surprised to stumble upon a little Yorkie who’d gotten out of his fenced in yard. [Hubs looked at me like “can we keep him??” and I had to remind him that this lil cute, groomed, thing might belong to a kid who’d cry bloody murder without him] We found the house and the owner was happy to get ‘Bam-Bam’ back…((le sigh)) I would have taken him more for a Leopold 😉
The night before [Monday] I’d cooked a variation of mashed cauliflower – good wifey! I have usually been making cauliflower pizza but wanted to shake things up just a tad! I found a bunch of recipes online but came up with one using what we had at the house:
Mashed {Protein-packed} Mediterranean Cauliflower
1 head of cauliflower
3/4 cup of low or non-fat Greek yogurt
2 pinches of salt
2 pinches of pepper
1 pinch of Greek seasoning
1 tbsp minced garlic
1/2 cup of ‘I can’t believe its not butter’
I steamed the cauliflower for about 20 minutes to cook it.
In my Cuisinart, I put in all of the other ingredients to puree.
Whoa-la! Easy, breezy, beautiful mashed cauliflower 😉
The birthday boy didn’t get any, but was happy to spend time with his mom and pop for the big 1-1!
Wednesday’s workout: am yoga, then [planned] at-gym WOD incl burpees & circuit training

Happy Birthday to Jaden as well. Great post Kat. I love mashed cauliflower and I pretty much do it the same way except I use 50% Low Sodium Chicken broth and 50% water to steam the cauliflower. Love it!!!
I love mashed cauliflower. It’s amazing how similar it tastes to mashed potatoes, but it’s so much healthier! And awesome job on your miles. You’re a beast! I want to run long runs on the weekend with you. Do you have your training plan typed on here somewhere so I can see if we overlap anytime?
Thank ya! I usually do long run Sat (am)/Recovery Sun(am)/Tempo Tues (Am)/Thurs speed (am or pm) – Saturday I run with the Brandon Running Association over in Fishhawk or on Nature’s way
